New Chérie Kelly Website! www.cheriekelly.co.uk

If you are following my facebook or instagram, you would know I have made a new logo and website! It has been a bit more than 2 years since I started Chérie Kelly here in blogger, I first started blogging about making cakes and pâtisseries as a hobby, later found my strong interest in sugarcraft cake decorating, and lately extended my passion to flower arrangements!

I was sorting out the images for my new website's gallery, I realised I have got such a large varieties of cakes portfolio - thank you so much for all your support! I felt like it was about time to give a new and more professional look to my site, as well as to include "flowers" to Chérie Kelly!

Engagement Party Dessert Table

Designing and making dessert table platters is so fun especially as there are several different elements, they look cute and pretty when they are put together. I was honoured to make this dessert table for my dear friend's engagement party. With coconut pineapple cake, mini spring fruit tarts, pistachio and chocolate macarons, passionfruit gelee and strawberry mousse with coconut panna cotta mini dessert pods. 

The coconut pineapple cake was decorated with some swirly rustic frosting and sugar peony. I like the mini dessert pods in different coloured layers :). The mini tarts were with creme patissiere filling which was the best match with the spring fruits and tarts. The most popular macarons were the pistachio and chocolate flavours.

Iced Easter Bunny, Chick and Egg Lemon Cookies

I have been looking forward to Easter to come, not just because of the long weekend, I wanted to use my Easter cookie cutters to make some cute bunny rabbit and chick cookies

Cheire Kelly's Iced Easter Bunny, Chick and Egg Lemon Cookies

Iced Easter Bunny, Chick and Egg Cookies

Make about 12-15 large cookies, depends on how large your cookie cutters are.

Ingredients

125g butter, softened
125g sugar
1 pinch of salt
1 tbsp lime zest, optional (or lemon/orange zest or vanilla bean paste)
1 egg
250g flour, plus extra for dusting

Equipments

Easter Cookie cutters of your choice, I used Bunny, Chick and Egg Cookie Cutters
Writing Nozzles Wilton size #2

Methods

1. Cream butter, sugar, salt and zest together until pale and fluffy. Add egg and beat until combined.
2. Sift the flour in and mix until just combined.
3. Cover the dough in plastic wrap and refrigerate for 30 minutes or until firm.
4. After chilling, roll the dough into 5mm thick on a lightly floured surface.
5. Use cookies cutters to cut the dough into your desired shapes, place them on a parchment lined baking sheet, chill them for 30min or until firm, this will prevent the cookies from spreading.

6. Preheat the oven to 180C. Bake the cookies for 12-15 minutes. Cool the cookies with the baking tray on a wire rack.


Royal Icing

Ingredients

450g icing sugar
30g egg white/meringue powder
1 tsp cream of tartar
vanilla or lemon extract
150ml warm water
a few drop of yellow, pink, blue and lilac food colouring

Methods

1. Put icing sugar, egg white powder and cream of tartar in a large grease-free mixing bowl, beat with a hand-held electric mixer until well blended.
2. Add in water and extract gradually, beat on high speed until icing is very thick and glossy, about 5 minutes.
3. The soft-peak icing can be thickened with more icing sugar to pipe the outlines, and the runny icing can be loosened with a few drop of water to flood and fill the outlined shapes.
4. Keep icing covered in damped towel at all times when it is not being used.
5. Divide into a few bowls for different colour, add food coloring and mix well with a teaspoon.
6. Use a piping bag fitted with size #2 nozzle to pipe the soft-peak icing around edges of cookies and make designs.
7. Flood (fill) the cookies with the runny icing, allow the icing to dry completely before adding the next layer.
8. Draw the eyes with edible food colour pen, pipe some patterns with some royal icing, decorate with fondant/icing flowers.

Gingerbread House ☃☃❄

December is my favourite month of the year! I have got lots of Christmas baking ideas I would love to make, gingerbread house is first on the list :-D I changed last year's ginerbread house recipe a little bit by using black treacle, I really like the subtle caramel flavour from the black treacle, it goes so well with the spices in the cookies.

I only managed to bake all the pieces for the gingerbread house, but didnt have enough time to build it before Kristina's Christmas Party, Kristina is now going to take this home to her family : ) one of her friends suggested maybe i could have just brought the pieces to the party, so everyone can build together, i will prob try next year :-P

Gingerbread House


For the Gingerbread House

250g unsalted butter
180g dark muscovado sugar
7 tbsp black Treacle
580g plain flour
2 tsp bicarbonate of soda
4 tsp ground ginger
2 tsp cinnamon
2 tsp nutmeg
2 tsp mixed spice

For the Decoration

1 bag of marshmallow (or selection sweets of your choice)
1 tube of 125g jelly diamonds (or selection sweets of your choice)
4 candle canes (or selection sweets of your choice)

2 egg whites
480g icing sugar
A Gingerbread House template (A4 size below)

Methods

1. Preheat oven to 180C.
2. Melt the butter, sugar and treacle in a pan.
3. Mix the flour, bicarbonate of soda, ground ginger, cinnamon, nutmeg and mixed spice into a large bowl.
4. Stir in the melted butter mixture to make a soft and smooth dough. If the dough is bit dry, add a tiny splash of water for the dough to come together,
5. Prepare and cut out the template of two side walls, a front and back wall and two roof panels.
6. Put a sheet of baking paper on your work surface and roll about one quarter of the dough to 0.8cm thick.
7. Cut out one of the sections according to the template, then slide the gingerbread onto a baking tray lined with baking sheet.
8. Repeat with remaining dough, re-rolling the trimmings, until you have two side walls, a front and back wall and two roof panels.
9. Any leftover dough can be cut into Christmas trees/gingerbread man/stars.
10. Bake all the sections for 10 mins, turn and bake the other side for 5 mins until firm and just a little darker at the edges.
11. Leave to cool for a few mins to firm up, then trim around the templates again to give clean, sharp edges. Leave to cool completely.

12. Put the egg whites in a large bowl, sift in the icing sugar, then stir to make a thick, smooth icing. Spoon into a piping bag with a medium nozzle.
13. Pipe the decorations on the house before it is assembled.
14. Pipe the windows, roof tiles, doors or any design of your choice over the outside of the house. Stick the sweets onto the walls and door of the house with some icing.

15. Leave them to dry completely.
16. To assemble, pipe a thick line of icing along the wall edges, one by one, to join the walls together.
14. Use a small mug/bowl/box to support the walls from the inside, then allow to dry completely.
15. Once dry, remove the supports and fix the roof panels on. The angle is steep so you may need to hold these on firmly for a few mins until the icing starts to dry. Dry completely, ideally overnight.
16. Dust the roof with icing sugar and edible glitter for a snowy effect.
17. Your gingerbread house will be edible for about a week but will last a lot longer.

Iced Parisian Poodle Dog and Eiffel Tower Sugar Cookies

One of the fun things to do on a rainy day is bake cookies and make the kitchen full of freshly baked cookie smell! To me the more fun part is to decorate cookies with icing :-D

I have been collecting various kind of cookie cutters, Poodle Dog and Eiffel Tower make a very pretty Parisian theme. I wanted to play more with royal icing, I thought piping the Eiffel Towers was difficult, but it is actually quite easy especially with a very small writing nozzle (I used Wilton size #1 writing nozzle).

Iced Parisian Poodle Dog and Eiffel Tower Sugar Cookies

Make about 12 large cookies, depends on how large your cookie cutters are.

Ingredients

8. For the Eiffel Tower, thicken the icing by mixing in some icing sugar until a bit sifter, use a piping bag fitted with size #1 writing nozzle to pipe the Eiffel Tower designs.

Passionfruit & Mango, Blueberry & Blackberry, Raspberry & Strawberry Cheesecakes; Figs, Mango and Raspberry Tarts ❤

I realised I have set up this sweet space for a year already! Happy 1st Anniversary to Cherie Kelly :) and massive thank you to everyone who likes my page, who visits my site, who emails/messages me, who comments on my posts, who supports me and places orders with me! every little things mean a lotttt to me xoxoxoxoxooxox

Mango and Passionfruit Cheesecake

Ingredients

For the Biscuit Base

180g digestive biscuits, crusted
50g butter, melted

For the Cheesecake

300g low fat cream cheese
70 g caster sugar
1 tbsp vanilla extract
1 tbsp lemon juice
10g gelatin leaves, soaked and softened in cold water, dissolved in 20ml boiling water
200ml whipping cream

For the Mango and Passionfruit Coulis Jelly

250g fresh mango and passionfruit, blended into puree
100g sugar
80ml water
2 tbsp lemon juice
6g gelatin leaves,
Some mango and passionfruit to decorate, optional

Utensils

6 presentation rings lined with Acetate Cake Collars or 7 inches springform tin

Method

For the Biscuit Base

1. Put the digestive biscuits and melted butter into a blender and pulse until they resemble breadcrumbs.
2. Spoon the biscuit mixture into the presentation rings placed on a large plate or springform tin. Press the mixture down firmly and chill in the fridge until set.

For the Cheesecake

1. Place the cream cheese, sugar, vanilla extract and lemon juice in a bowl and beat until creamy.
2. Add the melted gelatin liquid into the cream cheese mixture until well combined.
3. In another bowl, whip the whipping cream until stiff. Fold the whipped cream into the cream cheese mixture.
4. Spoon the mixture on top of the biscuit mixture and smooth the tops with the back of a spoon. Chill in the fridge until set for at least an hour.

For the Mango and Passionfruit Coulis Jelly

1. Put the mango and passionfruit puree and sugar into a small saucepan, boil on medium heat, gradually stir in the water and lemon juice.
2. Remove the saucepan from heat when the fruit mixture starts to boil, squeeze out the excess water from the gelatin leaves, stir well into the mixture until the leaves dissolved.
3. Set aside until it is cool.
4. Spoon the mixture on top of the cheese mixture. Chill in the fridge until set for at least an hour or overnight.
5. To serve, carefully remove the presentation rings and cake collars or the tin from the cheesecakes. Decorate with some mixed berries and enjoy!

Mango Tart

Ingredients

For the Tart

260g plain flour
2 tbsp icing sugar
150g unsalted butter at room temperature, cut in cubes
1 egg, whisked

For the Creme Patisserie

3 large egg yolks
50g golden caster sugar
17g corn flour
167ml full cream milk
1 tbsp vanilla bean paste

For the Mango Topping

100g milk or dark chocolate, melted
650g of Mango, sliced
6g gelatin leaves, soaked and softened in cold water
2 tbsp sugar
40ml boiling water

Utensils

10 x 3.5 inches loose base round tart cases

Method

For the Tart

1. Put flour, icing sugar and butter in a large clean bowl. Rub the butter into the flour mixture with your fingertips until the mixture resembles fine breadcrumbs.
2. Add 1 egg and 1 tbsp cold water gradually to the mixture until the dough comes together.
3. Wrap the dough in clingfilm and chill for 30 mins.
4. Lightly dust a work surface with flour. Gently roll out pastry to 3-4 mm thick.
5. Line the pastry into the tart case. Gently press the side and trim away the excess pastry.
6. Prick the base with a fork. Chill the pastry in the tin for 30-60 mins.
7. To blind bake the tart case: Preheat oven to 180C. Line pastry case with baking paper and fill with baking beans (can substitute with any other dry beans). Bake for 10 mins until pastry sides are set.
8. Remove beans and baking paper and return tin to oven for 10 mins until base is cooked through.
9. Take the tin out from the oven and set aside.

For the Creme Patisserie

1. Beat the egg yolks, sugar, and flour in a bowl to make a smooth paste.
2. Bring the milk and vanilla bean paste to the boil in a saucepan.
3. As soon as it reaches the boil, pour it over the egg mixture, stir well.
4. Return the whole mixture to the saucepan and cook over a low heat, stir constantly until the sauce is very thick and bubbling.
5. Transfer to a bowl and cover the surface with cling film to prevent a skin forming and leave to cool completely. Refrigerate until ready to use.

For the Mango Topping

1. Spread a thin layer of melted chocolate onto the centre of the tarts, chill the tarts in the fridge for several minutes until the chocolate is set.
2. In the meantime, melt the gelatin leaves and sugar with the boiling water, keep stirring until dissolved, set aside to cool.
3. Pipe the creme patisserie on top of the chocolate and tart.
4. Arrange mango slices like rose petals on top of the tarts.
5. Brush a thin layer of melted gelatin liquid onto the fruits, chill in the fridge until set for at least an hour before serving.

Portuguese Egg Custard Tarts (Pasteis de Nada) 葡撻

2 years ago, I had a crazy craving for some Portugese Egg Custard Tarts, those I found in London were not quite up to standard, I know Pasteis De Belem does the best Pasteis de Nada in Portugal, so we went to Lisbon over a bank holiday to satisfy my crave :-P

The crave is back.. :-0 this time i decided to make them myself ;-D

The creamy soft egg custard and the crispy buttery puff pastry are just heaven, they are all gone so quickly once they are out from the oven!

                                                                   

Portugese Egg Custard Tarts (Pasteis de Nada) 

Makes about 12 pastries

Ingredients


For the pastry

2 packages 320g all-butter ready-rolled puff pastry 

For the egg custard

2.5 tablespoons cornflour
40ml milk
225g granulated sugar
110ml water
200ml double cream
1 tbsp vanilla bean paste
5 large egg yolks, whisked

Utensils 

12 holes muffin tin with 2.0-2.5 inches diameter base

Methods

To make the custard

1. Mix the cornflour and milk in a medium bowl until combined. Set aside.
2. Put the sugar and water in a small saucepan, bring them to boil and remove from heat until it reaches 100°C. Do not stir.
3. Meanwhile, heat the double cream in another small saucepan until it starts to bubble, gradually pour the hot cream into the flour mixture, keep whisking until the mixture is well combined and thickened.
4. Carefully pour the sugar syrup from a side the hot cream and flour mixture, add the vanilla bean paste and stir until smooth and incorporated. Whisk in the yolks, strain the mixture into a bowl, cover with plastic wrap, and set aside.

To assemble and bake the pastries

5. Pre-heat the oven to 250°C. Lightly grease 12 muffin cups and line bottom and sides with puff pastry.
6. Fill pastry-lined muffin cups 3/4 full with the custard and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top.
7. Remove from the oven and allow the pasteis to cool a few minutes in the pan, then transfer to a rack and cool until just warm.
8. Serve warm with cinnamon or icing sugar (optional).

Lemon Meringue Pie

I have been seeing a lot of yellow this month, apart from the easter decoration, supermarket shelves are full daffodil and lemon! I havent made enough lemony dessert, I have always wanted to use my cool rectangular tart tin to make Lemon Meringue Pie :)

Lemon Meringue Pie

Ingredients

For the Tart
260g plain flour
2 tbsp icing sugar
150g unsalted butter, cut in cubes
1 egg

For the Lemon Custard Filling
3 level tbsp cornflour
125g golden caster sugar
finely grated zest 2 large lemon
200ml fresh lemon juice (from 5-6 lemons)
85g unsalted butter, room temperature
3 egg yolks and a 1 whole egg

For the Meringue
4 egg whites, room temperature
200g golden caster sugar
2 level tsp cornflour
finely grated zest 1 large lime for decorate (optional)

Utensils
36cm rectangular tart tin / 9 inches loose base round tart tin

Method

For the Tart

For the Lemon Custard Filling
1. Mix cornflour, sugar and lemon zest in a saucepan, strain and stir in the lemon juice gradually.
2. Cook over a medium heat, stir in 120ml water, keep stiring until thickened and smooth.
3. Remove from heat when the mixture starts to bubble, beat in the butter until melted and well combiined.
4. Beat the 3 egg yolks + 1 whole egg together, stir into the pan and return to a medium heat.
5. Stir constantly until the mixture thickens and bubbles.
6. Remove from heat and set aside while you make the meringue.

For the Meringue
1. Put the egg whites in a greasefree large bowl, whisk to soft peaks. While whisking, add sugar and cornflour gradually until it peaks. Set aside.
2. Give the lemon custard a quick whisk on high speed to a hot smooth filling, pour it into the pastry case.
3. Fill the meringue into a piping bag and pipe around the edge of the filling. You can also spoon the meringue and spread it onto the tart.

4. Return to the tin into the oven for 20 mins until the meringue is crisp and slightly coloured.
5. Remove from oven and let the pie cool down in the tin for 30 mins, then remove from tin and let it cool down completely for 30-60 mins before slicing.
6. Grate some lime zest on top, serve and enjoy the same day :)

Iced Easter Rabbit and Chicken Lime Cookies

Easter decoration is everywhere, I found some cute rabbit and chicken cookie cutters, they are quite big and seem to be best for iced cookies. I always wanted to make iced cookies, I have heard and read about how difficult it is to get the right consistency of royal icing, I gave a try and it is actually not difficult at all, the consistency can be adjusted with more icing sugar or water. These simple rabbit and chicken designs also make it easier to pipe the outline and flood (fill) the shapes with royal icing.

6. Preheat the oven to 180C. Bake the cookies for 12-15 minutes. Cool the cookies with the baking tray on a wire rack.

Royal Icing

Ingredients

450g icing sugar
30g egg white/meringue powder
1 tsp cream of tartar
vanilla or lemon extract
150ml warm water
a few drop of food colouring of your choice

Methods

1. Put icing sugar, egg white powder and cream of tartar in a large grease-free mixing bowl, beat with a hand-held electric mixer until well blended.
2. Add in water and extract gradually, beat on high speed until icing is very thick and glossy, about 5 minutes.
3. The soft-peak icing can be thickened with more icing sugar to pipe the outlines, and the runny icing can be loosened with a few drop of water to flood and fill the outlined shapes.
4. Keep icing covered in damped towel at all times when it is not being used.
5. Divide into a few bowls for different colour, add food coloring and mix well with a teaspoon.
6. Use a piping bag to pipe the soft-peak icing around edges of cookies and make designs.
7. Flood (fill) the cookies with the runny icing, allow the icing to dry completely before adding the next colour.

Vanilla Meringue Kisses

I had 3 egg whites left after making custard, by coincidence I then saw pictures of Meringue Kisses on the internet, I made these elegant little meringues straight away ✽

Meringue Kisses

makes 100 meringues

Ingredients

3 large egg whites
Pinch of salt
90g caster sugar
1 tbsp vanilla bean paste/extract
90g icing sugar, sifted
Pastel pink and lilac liquid food colour (or colours of your choice)

Equipments

plastic piping bag
star piping nozzle

Method

1. Preheat oven to 80°C. Line two baking trays with greaseproof paper. 
2. Whisk egg whites and pinch of salt in a large bowl with an electric mixer at high speed. 
3. Sprinkle the sugar into the mixture gradually when the whites thicken. Be careful not to over-whisk. 
4. Add the vanilla bean paste/extract and gently fold in the icing sugar using a rubber spatula. 
5. Divide the mixture into 3 bowls. One bowl white as it is, mix the second bowl with pink food colour and the third with lilac food colour. 
6. Place a star nozzle in a piping bag, fill with the first bowl white coloured mixture. 
7. Pipe little stars onto the lined baking trays.

8. Repeat steps 6-7 for the remaining pastel coloured mixture.

Cute Rabbit, Lion, Bear and Swirl Cookies

My mum bought a new oven at home, I couldnt wait to use it especially my sister was asking me to make her come cute rabbit and lion and bear cookies

Rabbit Icebox Cookies

Make about 30 cookies, depends on how large you make it and how thick you cut it.
150g flour
115g butter, softened
85g sugar
30g powdered sugar
1 egg yolk
2 tsp vanilla bean paste
1.5 tablespoons cocoa powder
pink food coloring
melted chocolate, for decorating

1. Cream butter and sugar together until pale and fluffy. Add egg yolk and beat until combined. Add the vanilla bean paste and mix.
2. Take about 1/2 of the mixture into one bowl. Add 100g of the flour  and cocoa powder to it and mix until a dough forms. Remove from the bowl and wrap with cling wrap and set aside.
3. Take the remaining 1/2 of the mixture and mix in the pink food colouring until the desired colour is achieved. Add the remaining 100g of flour and mix until a dough forms. Wrap with cling wrap.
4. To make the rabbit shapes, take 3/5 of the pink dough and roll out into a log about 5cm in diameter. Then divide the remaining 2/5 of the pink dough into two and roll out two logs about 1 cm in diameter. Set aside.
5. Take 1/5 of the chocolate dough and roll out into a 1og about 1cm in diameter.
6. Roll the remaining chocolate dough into a rectangle shape long enough to wrap around the pink logs. Wrap the chocolate dough around the pink dough and seal the edges.

7. Wrap the entire log in cling wrap and refrigerate for 15 minutes. Preheat oven to 160ºC and line a cookie sheet with baking paper. When the dough is firm, take the log out of the fridge and slice with a knife into 0.5cm slices. Place the slices onto the lined baking sheet, bake for 12-15 minutes and cool on a wire rack.

8. When the cookies are completely cooled, use melted chocolate to pipe eyes, feet and wings onto the cookies.

Swirl Cookies

Make about 30 cookies, depends on how large you make it and how thick you cut it.
150g flour
115g butter, softened
85g sugar
30g powdered sugar
1 egg yolk
2 tsp vanilla bean paste
1.5 tablespoons cocoa powder
yellow a icing tube and melted chocolate, for decorating

1. Cream butter and sugar together until pale and fluffy. Add egg yolk and beat until combined. Add the vanilla bean paste and mix.
2. Sift the flour in and stir until just combined.
3. Split the dough into half and put into two separate bowls.
4. One bowl will be used for the plain swirl.
5. The other bowl will be used for the chocolate swirl, add the cocoa powder into the bowl and mix until the dough become dark.
6. Roll the plain dough into a rectangle sheet of 5mm thick and set aside.
7. Roll the chocolate dough into a rectangle sheet of 5mm thick similar size to the plain dough. Place the sheet of chocolate dough on top of the sheet of plain dough. Roll them together and seal the edges.

8. Cover in plastic wrap and refrigerate for 15 minutes or until firm. After chilling, slice the log dough into 0.3 inch/8mm thick and place on a parchment lined baking sheet.
9. Preheat the oven to 180C. Bake the cookies for 12-15 minutes. Cool on a wire rack.


Lion Icebox Cookies

Make about 30 cookies, depends on how large you make it and how thick you cut it.
150g flour
115g butter, softened
85g sugar
30g powdered sugar
1 egg yolk
2 tsp vanilla bean paste
1.5 tablespoons cocoa powder
yellow icing tube and melted chocolate, for decorating

1. Cream butter and sugar together until pale and fluffy. Add egg yolk and beat until combined. Add the vanilla bean paste and mix.
2. Sift the flour in and stir until just combined.
3. Split the dough into half and put into two separate bowls.
4. One bowl will be used for the lion face.
5. The other bowl will be used for the lion hair, add the cocoa powder into the bowl and mix until the dough become dark.
6. Roll the plain dough into a long circle log.
7. Roll the chocolate dough into a rectangle shape long enough to wrap around the yellow circle log. Wrap the chocolate dough around the yellow dough and seal the edges.
8. Cover in plastic wrap and refrigerate for 15 minutes or until firm. After chilling, slice the log dough into 0.3 inch/8mm thick and place on a parchment lined baking sheet.
9. Preheat the oven to 180C. Bake the cookies for 12-15 minutes. Cool on a wire rack.
10. When the cookies are completely cooled, use piping icing and melted chocolate to pipe eyes, noses, mouths and ears onto the cookies.



Vanilla Butter Cookies

Make about 30 cookies, depends on how large you make it and how thick you cut it.
150g flour
115g butter, softened
85g sugar
30g powdered sugar
1 egg yolk
2 tsp vanilla bean paste
cookie cutters of your choice (I got this cute teddy bear one from here)

2. Sift the flour in and stir until just combined.
3. Cover the dough in plastic wrap and refrigerate for 15 minutes or until firm.
4. After chilling, roll the dough into 0.3 inch/8mm thick. Use cookies cutters to cut the dough into your desired shapes, place them on a parchment lined baking sheet.
